I made it today. We have gigante beans in the bulk section of the supermarket. Faux feta. Delicious!

When I am replacing feta in a recipe like this I choose something briney because that is really what I am going for--olives, capers, something like that! Or maybe even blitzing up tofu with capers to get the brine and creamy!
